Here you can see the breathtaking Amalfi coast in the southern Italian region of
Campagna. We were very lucky to spend time visiting this area best known for its
fresh seafood.

We always make a point of visiting local markets. In my opinion, they are the best
way to understand a region's culture and food.
|

Here you can see why we were inspired to create the new Grilled Shrimp Caprese entrée
after this trip. The variety of fresh seafood, or frutti di mare (literally
fruits of the sea) was amazing!

We dined at great restaurants throughout the region, sampling their specialties
and introducing our palates to new flavor combinations and ingredients.

Take a look at this plate of Mozzarella di Bufala… heavenly, no? Campagna
is famous for producing this fresh cheese from buffalo milk.

It wasn't all about eating however. We also spent much of our time learning tips
and secrets from some of the best local chefs. Here, Chef Jennifer learns how Chef
Fabio Zago of La Cucina Italiana prepares pasta.

In Venice, Chef Flavio listens to tips on creating the best traditional Venetian cuisine from the head chef of local restaurant, Osteria Delli Artisti.

Working with our friend Chef Berandino, our team learned his methods for preparing
fresh vegetables at his house in Casserta, Campagna.
|
|
|
|
|
Outside of the kitchen we learned the secrets to creating rustic, authentic brick
oven meals also at Chef Berandino's home.
|
|
|
|
|
After all that work we joined Chef Berandino, on his patio for a freshly made meal
and a fine glass of wine.
|
|
|
|
|
Although our team was saddened to leave after such an amazing trip, we were given
one last spectacular view of the legendary Mount Vesuvius with Naples at its foothills
on our way to the airport.
